For Sharon Kampa of Albert Lea, Minn., Dumpling Soup (or Dump-a-lump Soup, as it's called at her house) is a quick way to get a winter meal on the table. It's also her sneaky way to get her family to eat more vegetables.

What you need: Family-sized can of any vegetable beef condensed soup, frozen mixed vegetables, flour, sugar, eggs and milk.

How to make it: In a large soup pot, mix together vegetable soup, 1 can water and 1 cup or more frozen mixed vegetables. Bring to a boil. Meanwhile, make dumplings by mixing 2 cups flour, 2 to 3 tablespoons sugar, 1 teaspoon salt and 2 beaten eggs. (A pastry blender works well.) Slowly add about ΒΌ cup milk, mixing only until dough forms. As soup begins to boil, drop teaspoonfuls of dough into broth. Reduce heat to a slow boil. Cook dumplings for about 5 minutes. Turn off heat. Cover. Let dumplings set for 5 minutes. Serves 4.
