Sarah Turner of Woodbury makes this four-ingredient chicken and pasta dish regularly for her family. The goat cheese makes the sauce nice and creamy, she says. Her family loves it, even though they claim they don't like goat cheese. "I just don't tell them it's goat cheese," says Turner. "And they can't tell!"
What you need: 4 cooked chicken breasts, cut into bite-sized pieces (or 1 store-bought rotisserie chicken), 1 can (14.5 ounces) diced tomatoes, 1 small package (4 ounces) goat cheese, 1 pound bowtie pasta.
How to make it: Cook pasta according to package directions. Meanwhile, in large skillet, combine chicken, tomatoes and goat cheese. Cook until heated through. When pasta is done, add to skillet, stirring until mixture is well combined. Garnish with parsley or garlic, if desired. Add salt and pepper to taste. Makes 4 to 6 servings.
