Sallie Ward of Menomonie, Wis., contributed this recipe for Hamburger, Peas and Rice — or simply referred to as HPR at her house. She found the recipe in a Chinese cookbook about 35 years ago.
What you need: 1 pound ground beef, 1/2 cup diced onion, 1 1/2 cups frozen peas, 1 cup instant rice, water, oil and soy sauce.
How to maideaske it: Heat 1 tablespoon oil (olive or vegetable) in large skillet or Dutch oven. Crumble ground beef into pan. Add onion and 1 tablespoon soy sauce. Stir to mix. Cover. Cook over medium heat for 4 to 5 minutes or until meat is browned.
Meanwhile, heat 1 cup water in microwave for 2 minutes or until boiling. Remove from microwave. Add rice. Stir. Set aside.
When meat is cooked, drain grease, if necessary. Add rice and frozen peas. Stir. Cover. Heat in microwave for 4 to 5 minutes or until peas are cooked. Add more soy sauce, if desired. Makes 4 servings.
