Julie Novak of St. Paul passed on this quick and easy dinner recipe she got from a "Best of Cooking Light" cookbook a few years ago.

Annie Sullivan of St. Paul, an empty nester, likes this to make "paired-down" pan-seared salmon because it allows her to eat healthy and well without any waste or leftovers. She freezes the salmon fillets individually. That way, she always has the fish on hand and can adapt the recipe to any number of servings.

Reader Marlaine Maahs of Little Canada shares a recipe for a quick dinner that's a big hit in her house.
