Linda Christianson of Minneapolis always has these pantry items on hand to make this sandwich. "Since I have it often for dinner on the nights when I work late," she says, "I usually make it more filling by adding a slice of Canadian bacon and some cheddar, but Monterey Jack or even Havarti are other possibilities.

What you need: Egg, butter, Canadian bacon, cheddar cheese, English muffin

How to make it: In sauté pan, cook bacon for 2 minutes or until crisp around edges. Turn. Cook for 2 minutes to brown other side. Meanwhile, toast English muffin. Melt butter in small nonstick sauté pan. Add egg to pan. Season with salt and pepper. Fry until yolk is set but still soft. To serve, place egg on toasted English muffin. Add slice of cheddar cheese and bacon. Serves 1.
