The first few times Marlaine Maahs of Little Canada made Cajun Tilapia, her husband didn't get to try it because their kids ate it all. It also can be made ahead of time, she says. Simply freeze the fish in the marinade and then bake the frozen fish at 400 degrees for 45 minutes. The fish pairs well with couscous, rice or potatoes.
What you need: 3 tablespoons vegetable oil, 3/4 tablespoon chile powder, 1 1/2 teaspoons garlic powder, 3/4 teaspoon salt, pinch of cayenne pepper, 3/4 teaspoon paprika, 6 tilapia filets
How to make it: Preheat oven to 400 degrees. In a shallow baking dish, mix oil, chile powder, garlic powder, salt, cayenne and paprika. Coat the tilapia with the mixture. Bake for 8 to 10 minutes or until the internal temperature is 145 degrees.
